There is a moment at your party when someone picks up a glass and tastes something they were not expecting. And they understand, without anyone telling them, that this drink is about you. Where you were born, something your grandmother used to make, a place far from here. That moment does not happen by chance.

I have been planning weddings since 2005, and I also hold an international bartender’s licence. I use it for one thing only: building, with the couple, the cocktail that tells their story.

Almost every couple, when they think about the open bar, thinks about a list. Spritz, gin and tonic, the same bottles you will find at any wedding in the world. It works, but it is the same night as everyone else’s. The glass says nothing about the people getting married.

It never starts from a bottle. It starts from a story.

So we start from the opposite end. Not from what you like to drink, but from who you are. For a Jamaican bride we built a cocktail around tamarind, a flavour she had known her whole life and her European guests never saw coming. For a bride with Ethiopian roots we are working, right now, on a honey wine made only there, to bring into the party a piece of her heritage no Italian bar would ever have on its menu.

A detail like this counts more than it seems. An international wedding brings together people who have flown in from different continents, some of them meeting for the first time. A glass that tastes like where you are from becomes a conversation, a bridge, a way to let your story into the party without having to make a speech. It is the open bar that stops being a service and becomes a piece of you.

And like everything else about the day, the couple does not think about it. They tell us their story, and we turn it into something to drink. The work was done beforehand. All they find is the glass, already there, tasting exactly like where they come from.

A signature cocktail at an Italian wedding

Built for one couple, served for one night, and never found on a menu again.

How it is built

The story, not the bottle. We start from the culture, the memories, the flavour tied to a person or a place.

One flavour that carries it. Tamarind for a Jamaican bride. A honey wine for Ethiopian roots.

Sourced, not substituted. If the ingredient is not on any Italian bar list, it is brought in. The constraint is time, not availability.

Served once. The only people on earth who have tasted it are your guests, that night.

Ask this
Who is building your drinks list, and from what?

Ask whether the bar comes from the caterer’s standard menu or from a conversation about you. If nobody has asked where your families are from, you already know the answer.

Ciao, Massi

In two weeks: they got married on Lake Como, and a year later they bought a home on it.

Common questions

What is a signature cocktail at a wedding?

A drink created for one couple and served only at their wedding, built around a flavour tied to their heritage or their story rather than chosen from a bar menu. It sits alongside the standard open bar rather than replacing it.

Can you bring ingredients from your own country into an Italian wedding?

Often yes. Spirits and ingredients no Italian bar stocks can be imported or sourced in advance, from a Caribbean fruit to a wine produced in one country only. The constraint is lead time rather than availability, so it is a decision to take months ahead, not weeks.

How do you choose drinks for a multicultural wedding?

Start from where the families are from rather than from a drinks list. One flavour that a whole side of the family recognises does more for the evening than a longer menu, because guests who have never met have something to talk about.
